According to the EU General Law Regulation,
traceability is defined as the ability to trace and follow food,
feed, and ingredients through all stages of production, processing
and distribution. Regulation
EC/178/2002 provides information on provisions for
traceability which are applicable from 1 January 2006 covering all
food and feed, all food and feed business operators, without
prejudice to existing legislation on specific sectors such as
beef, fish, GMO's etc. Importers too are required to identify from
whom the product was exported in the country of origin.

With the increasing awareness among
consumers about food quality and safety, this importance of this
subject is ever-increasing. Development in food production methods
are resulting in more risks and challenges besides the existence
of food borne pathogens. International trade in food has also
increased the risk of infectious agents being disseminated from
the original point of production to another location. This has
resulted in a common realization that there is need for an
integrated approach to food safety that involves monitoring all
parts of the food chain. For more information on application of
risk analysis, risk assessment and risk management.
